Zucchini Bread 

2 cups sugar
1 cup vegetable oil
2 eggs
3 teaspoons vanilla
2 cups grated zucchini
1 teaspoon salt
1 teaspoons baking soda
1/2 teaspoons baking powder
3 cups flour
3 teaspoons cinnamon

Blend all ingredients together. 
Bake in greased loaf tin at 350 degrees for 1 hour or until inserted toothpick comes out clean
