Lemon Caper Chicken (Serves 2) 1/2 box Rotini 1 large brocolli top 2 chicken breasts 2 tbsp white wine 2 tsp garlic, minced 2 tbsp extra-virgin olive oil 2 tbsp lemon juice 1 tsp honey salt and pepper 2 tsp capers, rinsed and chopped Boil pot of salted water. Cook rotini. 3 min from end of pasta cook time, toss in chopped brocolli. Wash and dry the chicken breasts. Rub with salt and pepper. On medium high heat, sautee chicken breasts for 3 min one side, 1 minute on other. Remove chicken from pan. Saute garlic for 1 min. Add white wine and chicken. Cover and reduce heat to low for 10 min (or until chicken cooked throughly). In bowl, mix lemon juice, honey and salt and pepper, olive oil, and capers. Whisk. Once chicken is cooked, add lemon/oil mix to the pan, heat for 1 min. Mix chicken with drained pasta and brocolli.
