Beef Fajitas 1/2 cup lite beer 1/2 cup + 1 tbsp vegetable oil 2 tbps lime juice 1/4 medium onion, thinly sliced 3/4 medium onion, thickly sliced 1 tsp crushed red pepper 1/4 tsp ground cumin 1/4 tsp pepper 1 lb skirt steak 2 green peppers, cut into strips flour tortillas guacamole (see recipe) salsa sour cream 1. Mix beer, 1/2 cup oil, lime juice, 1/4 sliced onion, red pepper, cumin, and pepper for marinade. 2. Rinse skirt steak and squeeze excess moisture. Place steak and marinade in ziplock bag. Seal bag after pressing all the air out. Store in refrigerator for at least 4 hours. 3. Remove steak and thinly slice against the grain. 4. Heat 1 tbsp of oil on high in large pan. Add steak, and all onions, and green peppers to pan. Stir fry until meat is done and veggies are crisp-tender. 5. Dump in marinade juice into pan. Briefly bring to boil and serve with tortillas, guacamole, salsa, and sour cream. 6. Heat tortillas in microwave between damp sheets of paper towel (~60 sec).
