Chicken Cacciatore (Serves 3) 1/2 oz dried shiitake mushrooms 4 tbsp olive oil 1 1/2 lbs chicken legs 1 large onion, chopped 1/2 cup dry white wine 1 clove garlic, minced 1 tbsp tomato paste 1 14oz can stewed tomatoes 1/2 tsp allspice salt and pepper 2 bay leaves 1/2 tsp thyme Soak mushrooms for half an hour in enough warm water to just cover them. Heat oil in large skillet and cook the chicken until lightly browned on all sides. Add onion and saute a minute or two, then splash in wine and let it boil up. Lower the heat and add the garlic, paste, tomatoes, seasonings, mushrooms and liquid. Cover and cook slowly for about forty minutes. Remove bay leaves and serve over angel hair pasta.
